My friend Holly makes the most delectable little lamb chops, or “lollipops”as we like to refer to them. There’s something about this dish which brings memories of warm summer evenings with friends. A little time in the marinade and a short stint on the grill and you have heaven on a stick. When choosing your rack of lamb, plan for at least a couple bones per person. Here’s how she does it:

Ingredients
- 1 rack lamb
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp rosemary leaves fresh chopped
- 2 cloves garlic crushed
- 1 tsp Kosher Salt
- fresh ground pepper to taste
Instructions
- Preheat grill. Trim the fat off the rack then, using a sharp knife, separate the lollipops. Marinade them for as long as you can, up to 8 hours. I usually do it for 4-6 hours. The recipe I have says to do it for one hour (it's a skewered lamb recipe) but I've always done it much longer. Grill for just a few minutes on each side being sure to maintain rare or medium rare interior.
